Traditional Gujarati Golpapdi

Golpapdi is a treat from those craving something sweet and wholesome. Packed with the abundant sweetness of jaggery, and the creamy nuttiness of Amrutam Ghee, this delectable dessert is a healthy, yet mouthwatering option. As per the Ayurvedic scriptures, jaggery has many medicinal values. Apart from being an excellent substitute for sugar, It can improve hemoglobin levels and also boost immunity. This healthy energy bar is a favorite for kids and is also served as Prasad in many temples.
Ingredients
1 cup Whole Wheat Flour (Atta)
1 cup Amrutam Desi Ghee
1 cup Jaggery, grated (Gud)
1/2 cup Sesame Seeds (Til)
1/3 cup Mixed Dry fruits, chopped (Mewa)
1/4 tsp Cardamom Powder (Elaichi Powder)
Steps
-Chop or crush the jaggery into fine pieces. The bigger the jaggery pieces, the harder it is to melt, resulting in unwanted soft lumps.
-In a heavy-bottom pan, add Amrutam A2 ghee. Once it melts, add wheat flour.
-Continue roasting the wheat flour on low heat until it turns golden and starts giving out a sweet, roasted aroma.
-Add the sesame seeds, chopped nuts, and any other condiments you might like. Stir for a minute and then remove the pan from the flame.
-Quickly add the grated jaggery and cardamom powder. Mix it thoroughly and immediately. Quickly stirring the mixture is necessary so that it does not become hard and chewy.
-Take the resulting mixture and spread it on a greased plate. Level it evenly with a spatula.
-Lightly Sprinkle toasted sesame seeds on the surface and gently press it.
-Cut it into square pieces after a few minutes, but don't remove them from the plate till they cool down completely.
-Once it is cooled down, remove the rectangular pieces and store them in an airtight box.
Notes
You can also add 1.5 tsp of saunth, 1/3 cup grated dry coconut, 2 tbsp of crushed gond / Edible gum, 1/4 tsp of nutmeg powder, or 1/2 tsp cardamom powder, if you wish to make it healthier and more nutritious.
