Pudina (Mint) Paratha

Pudina paratha is a delicious and nutritious Indian bread with mint leaves is blended into the dough. When sprinkled with a few drops of melted Amrutam desi ghee and accompanied with yogurt or aam ka achaar (mango pickle), it is finger-licking good. You can enjoy it as a meal and even pack it up and take it to your office.
Ingredients:

3 cups Whole-wheat Flour

4 tbsp Amrutam Desi Cow Ghee

1/2 cup Mint (pudina, 18-20 leaves)

1 tsp Coriander Powder
-
1/4 tsp Asafoetida Powder (optional)

1 tsp Cumin Powder
-
1/2 tsp Red Chilli Powder
-
1/2 tsp Turmeric Powder

Salt to taste
Steps towards deliciousness:

Grind the mint leaves into a fine paste, without additional water.

Add coriander, cumin, red chili, asafoetida, turmeric and salt to the whole-wheat flour.

Add the mint and mix all together, kneading to form a medium-soft, smooth dough.

Keep the dough to rest in the refrigerator for 2 to 3 hours to rest.

Divide the dough into equal-sized portions and roll into balls till smooth.

Preheat a griddle or flat pan. Parallely, with a rolling pin (belan), roll each ball into a flat circle about 3mm thick.

Place the rolled out dough onto the heated pan and drizzle with Amrutam desi cow ghee around the edges as you flip the paratha occasionally till crispy brown.
Notes:

Adjust wheat flour quantity as per the softness of the dough.

As an accompaniment, you can replace yogurt with chutney or sauce.

You could also add ghee over the hot paratha as required.

For beginners, it’s alright if you can’t roll the dough out into a perfect circle. Parathas taste good in any shape.
