Flaky Laccha Parathas

Paratha ho to laccha paratha ho, varna na ho! (If it is parathas, it is either laccha parathas or nothing!) Parathas are an all-time favorite, widely loved and made with infinite variations. Laccha paratha is comparatively more time consuming to prepare than the others, but it's worth both the effort and time.
Preparation Time: 25 minutes
Cooking Time: 20 minutes
Serves: 2 servings
- 1 1/2 cup Maida/all purpose flour, 1 cup for dough + 1/2 cup for dusting
- Warm water for kneading
- 1 tablespoon Amrutam desi cow ghee
- Salt as per taste
Take 1 cup maida, 1 tablespoon Amrutam desi cow ghee and salt in a large bowl. Knead smooth dough by mixing all ingredients and adding warm water in small incremental amounts. Adjust water quantity as per the consistency, till it's soft like chapati dough.
Grease the surface of dough with 1/2 teaspoon Amrutam desi cow ghee, cover it and leave it to sit at room temperature for 20 minutes. Divide dough into 4 equal parts and make rounds out of each part.
Take one dough ball, flatten it between palms and dust it with wheat flour.
Now roll out dough ball in a circular shape (around 7-8 inches in diameter) or as thin as possible. Put 1/2 teaspoon Amrutam desi cow ghee evenly over entire surface then sprinkle 1 teaspoon wheat flour over it.
Now start folding and pleating. Then by holding two ends, swing and tap on board to stretch it slightly. Then roll into a spiral like a swiss roll. Make all the other rolls similarly.
Dust one roll and roll into a 6-7 inch diameter circle.
Fry the paratha on hot Tawa using desi cow ghee till both sides have golden brown spots. Your Laccha paratha is ready for you to gorge on it!
If the dough is created to make more parathas and there’s some leftover, store it in the fridge and use it within 2 days for better results.
You can add coriander garnish for an enhanced taste.
