Dudhi (Bottle Gourd) Halwa

An all-time favorite Indian dessert, and the best way to feed your child or any other family member with bottle gourd if they dislike this green vegetable. The recipe is rather simple with ingredients easily available in every household. The smooth texture and attractive green color makes it a mouth-watering, delicious treat. Combined with Amrutam pure desi a2 cow ghee, this delectable dessert is the healthiest and an absolute must-try.
Ingredients:
2 cups grated Bottle Gourd (500 gms grating)
2 cups Milk
1 cup Sugar (or as required)
1 tbsp Amrutam Desi Ghee
1/4 cup chopped roasted Dry Fruit
2 crushed Cardamom
Method:

In a heavy-bottomed pan, heat the milk.

Add the grated bottle gourd to the warm milk.

Cover the pan partially and let it cook on a medium flame for 15-20 minutes. Stir occasionally to avoid the contents to stick to the bottom.

Once the milk is completely absorbed, add sugar. Cook for another 10 minutes.

As the ghee starts separating from the halwa, add cardamom (Elaichi), and roasted dry fruit.

Add 1 tbsp of Amrutam desi cow ghee and stir for another minute.
Notes:

Dry fruits recommended in this dish are cashews, almonds, and raisins.

To make this dessert richer in taste, garnish it with a few strings of saffron.

You could also add a handful of dairy-fresh or homemade mawa and before removing it from the stove.
