Paushtik Moong Dal soup

Cereals and lentils are very, very healthy. Moong soup is famous for being high in protein with an abundance of vitamins and minerals. This antioxidants-rich dish helps cleanse the body, is excellent for diabetics, and improves metabolism. Its benefits are enhanced by the addition of pure A2 Cow Ghee. Ingredients

1/2 cup Whole Green gram (Green moong)

1 tsp Amrutam Cow Ghee

1/4 tsp Hing (Asafoetida)

1/2 tsp Green Chillies, finely chopped

4 Curry Leaves

1 tsp Cumin Seeds (Akha Jeera)

Lemon Juice, to taste (Nimbu ka ras)

Salt, to taste

Coriander leaves, for garnishing (Dhania)

Steps

-Wash and soak the moong dal for 4 hours. Then, cook it in a pressure cooker for 3 whistles. However, don’t drain the water.

-Now, blend the moong dal using a hand blender and set it aside.

-Meanwhile, heat 1 tbsp of Amrutam A2 cow ghee in a pan and add in the cumin seeds. Once they crack, add green chilies, hing and curry leaves and let it cook on a medium flame for a couple of seconds.

-Mix in the moong mixture, salt and 1 cup of water and cook it for approximately 5 minutes more, stirring occasionally.

-Squeeze in some lemon juice, garnish your soup with the coriander leaves and enjoy the delicious soup!
