The winter season can often be relentless where you may need to cover yourself with at least three layers of clothing. While you can reach out for a hot pot of water or soup, there’s a soothing delicacy that will keep your warm long enough to go about with your regular day. Gud Raab to the rescue!Raab is a traditional dish made in Rajasthani and Gujarati households, especially during the winter season. Its basic ingredients include bajra, jaggery, and pure A2 Cow Ghee. The heat from jaggery and bajra is sure to keep you warm. The pure A2 Cow Ghee does not only cleanse your body of toxins but is also a treat for your tastebuds.
Ingredients:
2 tbsp bajra flour (pearl millet)
1 tbsp whole-wheat flour (gehoon ka aata)
1/4 tsp saunth powder
1/4 cup jaggery (gud), crumbled
2 tsp Amrutam ghee
1/2 tsp carom seeds (ajwain), or cumin seeds (jeera)
1 tsp pounded black peppercorns (kaali mirch)
Procedure:
-First, combine the bajra, wheat flour, and 3 cups of water in a saucepan and place it on medium heat. Stir continuously till it is lump-free.
-Add the jaggery, saunth powder, and allow the mixture to come to a boil while stirring constantly. Continue to stir for about 5 to 8 minutes until the mixture begins to thicken.
-Heat ghee in a small pan; add ajwain (or cumin), black pepper and roast for a few seconds.
-Pour Amrutam ghee into the hot Raab mixture. You can adjust the consistency by adding water if required.
-Serve hot.
