Sumptuous Stir-fry Vegetables

A super-quick savory dish that’s the best alternative to the regular dal-chapati meal, stir-fry vegetables is as simple as the name suggests, yet it's very nutritious. This Chinese recipe is a mother's smart way to make her fussy kids eat vegetables. Like most dishes, it has multiple variations to it, right from the vegetables to the masala powders used to make it flavorful.
The most delicious recipe that we’ve tried and tested with Amrutam Ghee will turn boring vegetables into an exotic dish.

Ingredients :
½ cup Babycorn
½ cup Broccoli
½ cup Paneer (chopped in cubes)
½ cup Capsicum (chopped in cubes)
1 finely chopped Red Chilli
½ tbsp Cornflour dissolved in 2 tbsp water
1 tbsp Amrutam Desi cow ghee
1 tbsp Coarsely ground Peanuts
½ tbsp Sugar
1 tbsp Soy Sauce
½ tsp Lemon Juice
Salt To Taste
Method :

Wash, rinse, and blanch the broccoli and baby corn and strain them.

Mix soy sauce, salt, sugar and lemon juice in cornflour dissolved in water and keep aside.

Heat oil in a pan and add the finely chopped red chili, peanuts, capsicum, and paneer. Keep stirring.

Add the blanched veggies and lightly toss on high flame.

Add the cornflour mixture and toss again.

Switch off the flame when the cornflour mixture will thicken and cover the veggies.

Serve this delicious hot dish with chili flakes.

Any vegetables of your choice can be taken.

It tastes best when served instantly after cooking.

You can add one more spoon of ghee on the finished dish to enhance the taste.
