Saffron Rice

Saffron Rice is one of the most loved and handy recipes with common ingredients easily available in the kitchen. It's a traditional Indian dish made with the goodness of desi ghee. It's also served as Prasad on many festivals especially Navratri.

Ingredients:

1 cup Basmati Rice

½ cup Milk

½ tsp Saffron Strands

8-10 Cashews, cut in half

10-15 raisins

½ cup green peas

5-6 cardamom pods (Elaichi), broken

2 small Cinnamon sticks

2 Green Chilies, slit

4-5 whole Peppercorns

2 small Bay leaves

1 tbsp Amrutam desi ghee

Salt to taste

1 ½ cup of Water

Method:

  • Wash and soak the rice in cold water for 30 minutes.

  • Warm the ½ cup of milk and add the saffron strands. Let it simmer for 5 minutes till the color develops.

  • In a big vessel heat Amrutam ghee, add cardamom, bay leaf, peppercorns, green chilies, cinnamon sticks, cashews, and raisins.

  • Saute the dry fruits well for about a minute.

  • Then add soaked rice, carrots, and peas, saute for another 2 minutes. The rice grains should be nicely coated with ghee.

  • Mix together saffron milk, water, and add in the rice.

  • Season the rice with salt according to your taste and cook on medium-low heat for about 15-20 minutes. The water quantity is very crucial as an excess of it can make the rice extra soft.

  • Garnish with few saffron strands and fresh coriander.

  • Serve hot with raita and pickle.

Notes:

  • To prepare saffron milk, soak a few threads of saffron in 2 tbsp of warm milk for 10 minutes.

  • Ready saffron milk available at your nearest store will work, too.

  • For an enhanced flavour, just add another tbsp of saffron milk.
