Mumbai Style Pav bhaji

Masala pav/Pav bhaji is one of the most loved fast food/street food in India. It's a Maharashtrian dish, made with multiple variations. It's invariably a part of all chaupatis and restaurant menus. Pure desi cow ghee adds amazing flavor to this dish and uplifts it's already yummy taste. Here’s the recipe for the most relished and popular dish:
4 tbsp Amrutam desi cow ghee
1 tomato finely chopped
1 tbsp green chili paste
½ cup finely chopped capsicum
¾ cup boiled cauliflower florets
¾ cup boiled green peas
2 tsp pav bhaji masala
1/3 cup water
2 tbsp finely chopped coriander leaves
2 tsp red chili powder
Salt as per taste
3 bread buns (pav)
Add 2 tbsp Amrutam Desi cow ghee to a pan.
Then, add green chili paste, stir and saute well.
Add finely chopped tomatoes, capsicum, cauliflower, green peas, and stir and saute for 3 to 4 minutes on medium flame.
Then add red chili powder and pav bhaji masala. Add salt as per taste and stir well.
Put water and let the mixture simmer as it turns thicker on medium flame, then mash well using a vegetable masher.
Bring the masala to one side of the Tawa or pan. Slice the buns horizontally, melt some Amrutam Desi cow ghee on the empty space in the Tawa. Place the pav slices on it. Toast them lightly from both sides. Now spread the masala on the pav evenly.
Serve this sumptuous dish hot, add some lemon juice on it and garnish with the coriander leaves.
The consistency of the masala is important as thin and liquid type masala can make bun soggy.
You can add the vegetables of your choice to replace the ones in the ingredient list. However, ensure that it is soft enough to mash.
