Authentic Rajasthani Laapsi

Laapsi is one of most humble sweet dishes; very earthy with no fancy frills. It is part of both Rajasthani and Gujarati cuisine and made especially during Navratri. Wheat, being a rich source of Vitamins, and A2 cow ghee being a rich source of nutrients, are present in this dish and helps boost immunity.
Ingredients
1 cup Broken wheat/Daliya
1/3 cup Amrutam A2 Ghee
3 Cloves
4 Green Cardamom
1/3 pinch Cinnamon
1 cup Jaggery/ sugar
12 Almonds chopped
2 tbsp Raisins
1/2 tsp Cardamom Powder
Steps
-Heat Amrutam ghee in a kadhai and add broken wheat. Fry on medium heat, while stirring regularly, until the wheat turns golden brown.
-In a separate pan, boil water with jaggery till the jaggery melts.
-Slowly, add the jaggery water to the roasted broken wheat. Add it from the side as there would be a lot of sputtering.
-Add half the cardamom powder and grated coconut. Mix well.
-Reduce the heat to low and cook covered till the water is all soaked up and the Daliya is well cooked; about 20-25 minutes.
-Transfer the laapsi In a serving dish and garnish with remaining grated coconut, cardamom powder and almonds.
Notes
-Though making laapsi is quite easy but often the cooked grains become a little chewy if you directly add the sugar in the cooked daliya.
-Add sugar in little water, boil till sugar dissolves, then add it in the daliya to make it perfectly soft. You can add the dry fruit of your choice. However, almonds and raisins taste great.
-You can add saffron strands to give a wonderful flavour.
