Sprouted Moong Bean Salad

Ingredients:

1 cup sprouted moong beans

1/4 cup sprouted black-eye beans

1/4 cup finely chopped tomato

1 tsp. finely chopped coriander leaves

1/4 cup fresh pomegranate arils

1 tsp. coriander leaves finely chopped

1/2 tsp. cumin seeds

1/4 tsp. turmeric powder

1/4 cup chopped green chilies

2 tsp. Amrutam A2 cow ghee

1/4 tsp. black salt

Salt and pepper to taste

1 tsp. lemon juice

Preparation method:

  • Set both the beans in a pan and add water till they are covered completely. Add salt and turmeric. Cook on low heat for 5-6 minutes (check, if not slightly tender yet then cook until the sprouts are slightly tender).

  • Strain the extra water and then add Amrutam A2 cow ghee.

  • Add the chopped vegetables and pomegranate arils to the sprouts. Sprinkle all the spices and lemon/lime juice and mix gently. Garnish with coriander leaves.

Note:

You can try adding any fruit or vegetable of your choice. However, if you’re a novice cook, it’s best to stick to the above ingredients as the pairing of certain vegetables and fruits can ruin the balance of flavor.
